Mexican Lasagna
What’s not to love about this variation on an Italian favorite?!? I recommend using a thicker salsa for this recipe.
4-6 whole wheat tortillas
16-oz jar salsa
1 lb. gr beef, turkey burger
3 tsp chili powder
1 1/2 tsp cumin
1 clove minced garlic
½ medium onion chopped
½ lb sliced mushrooms
1 ½ cup cottage cheese
½ cup sour cream or greek yogurt
1 tsp cumin
1/4 tsp red pepper (optional)
8 oz pkg shredded cheddar, Mexican blend, quesadilla cheese.
Heat oven to 350. Brown meat and onion and mushrooms in skillet. Add 1 tsp cumin, 1 tsp chili powder. Set aside. IN separate bowl, mix cottage cheese and sour cream, cumin, chili powder, red pepper. In 1 ½ qt. casserole dish, spoon small amount of salsa on bottom. Layer with 2 whole wheat tortillas, half of meat mixture, 1 cup salsa, ½ of cottage cheese mix, shredded cheese. Repeat layers, top with shredded cheese. Bake for 30 minutes.
