This isn't exactly Mediterranean, but it's a good compromise when you've just got to satisfy a sweet tooth.   Avocados are a healthy source of fat  (and you won't taste it in the dough) and using whole wheat flour instead of white flour slows the absorption of carbohydrates into the bloodstream. 

2 avocados pitted and mashed

1 egg

3/4 cup sugar substitute

1 tsp baking soda

1 tsp salt

1 1/2 cups whole wheat flour, or half white flour/half whole wheat

chocolate chips

walnuts, raisins (optional)

 

Preheat oven to 350.  Mix avocados, sweetener, eggs.  Mix well.   stir in dry ingredients.  Mix in chocolate chips and other solid ingredients as desired.

 

Bake for 10-15 minutes.
