Whole Wheat Tomato Cheese Muffins

Reminiscent of tomato soup and grilled cheese sandwich this is another way to make sure you get breakfast.  Or lunch.

Grab and Go Tomato Cheese Muffins

1 8 oz can tomato sauce

1 cup milk, almond milk, soy milk  (you can also substitute diluted yogurt or sour cream)

1/3 cup sugar, or sugar substitute

1 egg

1 tsp basil or thyme or Italian seasoning if desired.

1 tsp salt or garlic salt

2 tsp baking powder

1 ½ -2 cups  white whole wheat flour

8 oz cheddar cheese cubes

½ lb cooked bacon or kelbasa (optional)

Parmesan cheese

 

Mix first 7 ingredients up to flour.  Stir in ¾ of flour, leaving some aside.  Stir in cheese and meat.  Stir in remaining flour enough to aerate muffins.  Scoop batter into jumbo sized muffin cups.  Sprinkle parmesan cheese on top.   Bake 20-25 mins.
